AVOCADO SALAD WITH BACON & GOAT CHEESE

The first time I made this recipe it was from whatever was available in my fridge. I thought, I like all these ingredients and I'm sure all these flavors would work well together. Sure enough it did!

It's light and refreshing. Goes well with chicken, steak or fish. You can really play around with the ingredients. That's the beauty of food. I looked at what I had in my fridge and came up with something that's oh so good.

Easy Peasy Lime Squeezy!

AVOCADO SALAD WITH BACON & GOAT CHEESE

Serves 4

2 slices bacon, fried and chopped

2 avocados, halved and pitted

1/2 cup grape tomatoes or cherry tomatoes, halved

1-2 limes, juiced

4 tablespoons goat cheese, crumbled

Freshly ground black pepper

Lay the bacon in a saute pan, fry until crispy. Line a plate with paper towels, and drain bacon.

Using a large spoon, scoop out each half of the avocado. Slice the avocado and arrange on a platter. Scatter the tomatoes over the avocado. Drizzle with the lime juice. Scatter the bacon and goat cheese over the top. Sprinkle with black pepper.

Note: To serve on individual plates, it's half of the avocado, half bacon and one tablespoon of goat cheese per person. Distribute the remaining ingredients evenly.
